Beyond the Red Flesh

Seedless varieties: Convenient but seeds are actually edible and nutritious.
The rind: Do not discard it! Watermelon rind pickles are delicious. In some cuisines, the rind is stir-fried as a vegetable.
Ripeness Signs
The thump: A ripe watermelon sounds hollow when thumped.
The field spot: The underside should be creamy yellow, not white or green.
Dry tendril: The curly tendril nearest the fruit dries when ripe.
Growing Watermelons
Watermelons need space – vines can spread 6 meters. They need heat and a long growing season. Start indoors in cool climates. Choose smaller “icebox” varieties for small gardens or short seasons. Water consistently until fruits are nearly ripe, then reduce to concentrate sugars.
