Hyssop has been used for ritual purification since biblical times – “purge me with hyssop and I shall be clean.” Whether the hyssop mentioned in the Bible is exactly this species is debated, but this hyssop certainly has an ancient history of spiritual and medicinal use.

Culinary Uses

Hyssop has a complex flavor – minty, slightly bitter, with hints of sage. Use sparingly as it is strong:

With rich meats: The bitter quality cuts through fatty dishes. Traditional with game.

In salads: Young leaves add interesting complexity.

Herbal liqueurs: Hyssop is essential in Chartreuse and contributes to BƩnƩdictine and other herbal spirits.

Medicinal Uses

Hyssop is traditionally used for respiratory complaints – coughs, bronchitis, and congestion. The essential oil is powerful and should be used with caution. Tea from the leaves and flowers is gentler and has been drunk for centuries.

Hyssop is a beautiful semi-evergreen shrub with spikes of blue, pink, or white flowers. Bees absolutely love it. Plant in well-drained soil in full sun. It tolerates drought and poor soil. Makes an excellent low hedge or border plant.
