Scallops with Mango and Chili
Scallops (Pecten species) are a popular seafood available fresh or frozen. This recipe combines pan-seared scallops with a fresh mango salsa.
Ingredients
Serves four
- 300 g scallops, cleaned
- 1 onion
- 1 mango
- 2 red chili peppers (Capsicum annuum)
- 1 teaspoon horseradish powder (Armoracia rusticana)
- 1 teaspoon salt
- 1 teaspoon black pepper
- Fresh parsley (Petroselinum crispum) to taste
- Lime juice
Instructions
- Squeeze lime juice over the scallops. Set aside while you prepare the other ingredients.
- Cut the onion, mango, and chili peppers into small pieces.
- Mix the onion, mango, chili, horseradish powder, salt, pepper, and parsley together. Set the salsa aside.
- Heat a pan over high heat. Sear the scallops briefly on each side until golden brown. Do not overcook.
- Arrange the seared scallops on plates. Serve the mango salsa alongside.
Serving Suggestion
Serve with fresh bread, butter, and a green salad.
