Cabbage Soup with Meatballs
This is a hearty vegetable soup with homemade meatballs. It combines white cabbage with potatoes, carrots, and fresh herbs. The meatballs are made soft and juicy by adding bread soaked in milk.
Ingredients
For the soup
- 10 cups water
- 3 potatoes (Solanum tuberosum), peeled and chopped (approximately 2½ cups)
- ½ head white cabbage (Brassica oleracea var. capitata), shredded
- ½–1 tablespoon butter
- 1 large onion (Allium cepa), chopped
- 2 carrots (Daucus carota), peeled and chopped
- 2 celery stalks (Apium graveolens), sliced
- 2 cloves garlic (Allium sativum), chopped
- 3 tomatoes (Solanum lycopersicum), seeded and chopped
- 1 medium bell pepper (Capsicum annuum), red
For the meatballs
- 500 g ground chicken
- 2 slices bread
- ⅓–½ cup milk
- 2 tablespoons sour cream
- ½ small onion, grated
- 1 clove garlic, grated
- ¾ teaspoon salt
- ¾ teaspoon ground black pepper
- Fresh herbs, chopped: dill (Anethum graveolens), parsley (Petroselinum crispum), green onion (Allium fistulosum)
Instructions
For the soup
- Bring the water to a boil in a large pot. Add the potatoes and cabbage. Season with salt and pepper.
- Melt the butter in a pan. Add the onion, carrots, celery, and garlic. Season with salt and pepper. Cook over medium heat for approximately 5 minutes until the vegetables are slightly tender.
- Add the tomatoes and bell pepper. Season again with salt and pepper. Cook for an additional 3 minutes.
- Add the sautéed vegetables to the soup pot.
- Simmer the soup on low heat for approximately 20 minutes total, until the potatoes are soft.
For the meatballs
- Cut the bread into pieces and pour the milk over it. Let it soak for approximately 2 minutes. Mash the bread with a fork or blend in a food processor.
- Mix all the meatball ingredients together. The mixture will be very soft. This is normal and makes the meatballs tender and juicy.
- Form small meatballs using wet hands. Drop them into the simmering soup.
- Cook for an additional 5–7 minutes, or until the meatballs are cooked through.
- Remove the soup from heat. Garnish with fresh herbs.
Serving Suggestion
Serve hot with a spoonful of sour cream.
