The Taste of Spring
Fresh peas straight from the garden are one of life’s great pleasures. The sugar in peas starts converting to starch the moment they are picked – which is why even the best store-bought peas cannot compare to homegrown. This is one vegetable worth growing yourself.
Types of Peas
Shelling peas: The classic – shell them and eat only the peas inside. Sweet, tender, and worth the effort.
Snow peas: Flat pods eaten whole before peas develop. Essential in Asian stir-fries.
Sugar snap peas: The best of both worlds – plump peas in an edible pod. Sweet enough to eat raw as a snack.
Beyond the Pods
Pea shoots: The tender growing tips of pea plants are a gourmet delicacy. Harvest when 10-15cm tall. They have a sweet, pea-like flavor and are wonderful in salads and stir-fries.
Pea flowers: The delicate flowers are edible and make beautiful garnishes.
Cooking Fresh Peas
Fresh peas need very little cooking – 1-2 minutes in boiling water or a quick sauté. Overcooking turns them mushy and grey. Add a pinch of sugar to the cooking water to enhance their sweetness.
Classic combinations: Peas with mint, peas with bacon and cream, pea and ham soup, pea risotto, smashed peas on toast.
