Description

German Winter Thyme (Thymus vulgaris)

Improves with cooking: One of few herbs that gets better with heat

Natural antiseptic: Thymol was used in hospitals before antibiotics

Essential in bouquet garni: The French classic herb bundle

The Cook’s Essential Herb

Thyme is unique among herbs – its flavor actually improves with long cooking. While basil, parsley, and cilantro lose their character when cooked, thyme becomes more complex and integrated. This makes it essential for braises, stews, roasts, and slow-cooked dishes.

Bouquet Garni and Herb Bundles

The classic French bouquet garni consists of thyme, bay leaf, and parsley stems tied together. This bundle is added to stocks, soups, and braises, then removed before serving. The thyme provides backbone, the bay adds depth, and the parsley contributes freshness.

Herbes de Provence: This dried herb blend from southern France features thyme prominently, along with rosemary, savory, marjoram, and lavender. Use it on grilled meats, roasted vegetables, or in bread.

Best Uses for Thyme

Roasted chicken: Stuff the cavity with thyme, lemon, and garlic. The aroma while roasting is incredible.

Mushrooms: SautƩ mushrooms with butter, garlic, and fresh thyme. The earthy flavors complement each other perfectly.

Beans and lentils: Add thyme sprigs while cooking. The herb enhances the earthy legume flavor.

Tomato dishes: Thyme and tomatoes are natural partners in sauces, roasted tomatoes, and ratatouille.

Medicinal History

Thyme contains thymol, a powerful natural antiseptic. Before modern antibiotics, thymol was used to disinfect hospital bandages. Thyme tea is still an excellent remedy for coughs and sore throats. The essential oil should be used with care – it is very concentrated.
