The Herb Garden Essential
Chives are the mildest member of the onion family, offering a subtle oniony flavor that enhances without overwhelming. They are indispensable in the kitchen – snipped over potatoes, stirred into sour cream, scattered on eggs, or mixed into soft cheese.
Culinary Uses
Always add at the end: Heat destroys the delicate flavor. Add chives after cooking or as a garnish.
Classic combinations: Baked potatoes with sour cream and chives. Scrambled eggs with chives. Cream cheese and chives on bagels. Chive butter on steak.
Chive blossoms: The purple flowers are edible with a mild onion flavor. Pull apart individual florets and scatter over salads for beautiful color.
Growing and Harvesting
Chives are perennial and nearly indestructible. Cut the leaves down to about 5cm above the soil – new growth appears quickly. Regular cutting keeps plants productive and prevents them from going to seed. Divide clumps every few years when they become crowded.
