Giants of the Garden
Sunflowers are pure joy. Children love their dramatic size – some varieties reach 4 meters tall. Adults appreciate their cheerful faces tracking the sun (a behavior called heliotropism, though mature flowers face east permanently). Everyone enjoys the seeds.
Growing Giant Sunflowers
For maximum height: Start seeds indoors 3-4 weeks before last frost. Transplant carefully – sunflowers have a sensitive taproot. Choose a spot with full sun and protection from wind. Feed heavily with nitrogen until flowering begins.
Space properly: Giant varieties need 60-90cm between plants. The large flower heads become heavy – stake if needed.
Harvesting Seeds
Let flower heads dry on the plant until the back turns brown and seeds are plump. Cut the head with 30cm of stem and hang in a dry, well-ventilated place to finish drying. To remove seeds, rub the face over a bucket or wire mesh.
Roasting: Soak seeds in salted water overnight. Drain and spread on a baking sheet. Roast at 150°C for 30-40 minutes, stirring occasionally, until golden and crispy.
Supporting Wildlife
Sunflowers are ecological champions. The flowers provide nectar and pollen for bees. The seeds feed birds – goldfinches, chickadees, and many others. Leave some seed heads standing through winter to provide food during the leanest months. The stalks offer winter shelter for beneficial insects.
Edible Sprouts
Sunflower sprouts are a nutritious microgreen with a nutty, slightly sweet flavor. Grow on a shallow tray of soil, harvest when 7-10cm tall. They are excellent in salads and sandwiches.
