Brassica rapa is the speed demon of the vegetable garden. Baby turnip varieties are ready in 30-35 days. Asian greens like pak choi reach harvest size in 30-45 days. This makes them perfect for filling gaps, succession planting, and quick harvests.
The Many Faces of Brassica rapa
Turnips: Grown for roots, though the greens are also excellent. Baby turnips are sweet and tender; mature ones are more peppery.
Pak choi (bok choy): Crisp white stems with dark green leaves. Essential in Asian stir-fries.
Napa cabbage: Tall, cylindrical heads with mild, sweet flavor. Perfect for kimchi and Asian soups.
Mizuna: Feathery leaves with mild mustard flavor. Excellent in salads.
Tatsoi: Spoon-shaped leaves in rosette form. Mild and versatile.
Using Turnip Greens
Do not discard turnip greens – they are more nutritious than the roots! Sauté with garlic and olive oil, add to soups, or braise Southern-style with bacon. The slightly bitter, peppery flavor is delicious and distinctive.
Growing Tips
These fast-growing vegetables prefer cool weather. Plant in spring or late summer to avoid the heat of midsummer, which causes bolting (going to seed) and bitter flavors. Succession plant every 2-3 weeks for continuous harvest.
