Corn Salad Volhart 2 (Valerianella locusta)
Cold weather champion: Grows when other salads fail
Nutty, mild flavor: Delicate taste perfect for winter salads
No cooking needed: Best enjoyed raw and fresh
The Winter Salad Solution
Corn salad (also called mâche or lamb’s lettuce) is one of the few salad greens that thrives in cold weather. While other lettuces turn bitter or bolt in cold, corn salad produces sweet, tender rosettes through autumn, winter, and early spring.
Delicate and Distinctive
The small, spoon-shaped leaves have a mild, slightly nutty flavor unlike any other salad green. The tender texture melts in your mouth. This is not a bold salad green – it is subtle, refined, and elegant.
Serving Suggestions
Simple salad: Dress lightly with a mild vinaigrette – strong flavors overwhelm its delicate character.
Classic French: Combine with beets, walnuts, and goat cheese for a traditional French bistro salad.
As a bed: Use as a delicate bed for fish, scallops, or other refined dishes.
Never cook it: Corn salad is too delicate for cooking – heat destroys its charm.
Growing Tips
Sow in late summer for autumn harvest, or in autumn for winter and spring harvest. Corn salad tolerates hard frost and even snow cover. It grows slowly but surely through cold weather when little else will. The plants are small, so sow thickly or in blocks for worthwhile harvests.
