The Mild Mustard

White (or yellow) mustard is the mildest of the mustards and the most common in prepared mustard. American yellow mustard gets its color from turmeric, but the flavor comes from these mild white mustard seeds.

Three Crops in One

Sprouts: Grow mustard sprouts in days. Peppery and nutritious.

Greens: Young leaves are excellent in salads or cooked. Peppery flavor.

Seeds: Let plants mature for seed harvest. Use whole or ground.

Making Mustard

Grinding mustard seeds and mixing with liquid activates the pungent compounds. Different liquids produce different results – water makes the hottest mustard, vinegar makes it milder and more stable. Homemade mustard is simple and far superior to most commercial products.

Growing Mustard

Mustard is extremely easy and fast-growing. Direct sow anytime the soil can be worked. It bolts quickly in heat – grow in cool seasons for leaves. Let some plants flower and set seed for harvest. Also excellent as a quick cover crop to suppress weeds and add organic matter.
